Hi all! I know it’s weird that I’m posting on a Friday, BUT, I’ve got something to share with you. My family and I are begining our journey from city to farm. Over the next year we will be learning to be more self-sustainable. At the end of the 365 days, we will either be shoppinng for a small farm if we decide that it works for us, or we will simply be living much more sustainably, having learned a bunch of new and valuable skills. Either way it turns out, we will definitely have a few chickens and super fresh eggs, and enough canned produce to feed many, many people.
I also look at this project as a way of reviving some of the lost kitchen arts like canning and culturing (maybe fermentation if I get brave…) I’ll be learning how to make cheese, yogurt, and butter, bake all kinds of bread, and perfect my planting and harvesting process. I’ll also be learning all about keeping goats and chickens. The hubby is also going to be dabbling in distilling whiskey.
So whether you want to learn some knew skills, find great resources for becoming more self-sustainable, or are interested in sharing your own journey to become more self-sustainable with us, I would LOVE, LOVE, LOVE for you to follow along with us at Le Petit Farm Project

Welcome to Monday. Welcome to your week. And welcome to Coffee Break! This week I’m featuring my finds of super awesome small plates and/or tapas. Why small plates? Well, believe it or not this week’s post was inspired by the Superbowl…and the fact that I don’t watch it. Confused? Well, here goes.
Talk of Superbowl festivities are everywhere right now, and honestly it is all just wasted on me. However, there is one thing that I do really love about Superbowl time. The parties…nay, the food. Appetizers everywhere, right? And I’m kind of an appetizer junkie. I’m a tapas junkie, too. To me, it’s like winning the lottery when you are out to eat. When I’m really hungry and I go out to eat I often joke that I want to just order everything from the left side of the menu. With tapas, you actually can!
So basically, to leave a path of bread crumbs through this explanation of how my not watching the Superbowl equals a post on tapas…Superbowl=Appetizers=me thinking about eating tiny bits of food with many different flavors even if I don’t go to a Superbowl party. Tada!

Ok guys, let’s talk about breakfast. Supposedly it is the most important meal of the day. On this point I have to beg to differ. Well, wait. From a nutritional standpoint, I’ll agree. However, from a “this meal contains many recipes that I love to eat” perspective, I have to give it a rating of meh, at best. let me backtrack a bit here and explain myself.
Now, I realize that breakfast can contain many delicious items. Items that contain bacon and cheese and things like hollandaise sauce. BUT, when actual morning, AKA breakfast time, arrives, who has time to make or eat these delicious items. Not I. And so it is cereal or bagels for the rest of us. And I am left just dreaming of dinner.
Then something happened…I found this recipe for mini egg and cheddar cups. In one swoop, convenience and scrumptious-ness met and had a baby. And that baby was named Mini Egg and Cheddar Cups. Feel free to call these babies whatever you like, Bob, Jane, Suzy, Rebekah {oh I’m Flattered!}. Just know this: whatever you call them, they will surely be delicious.
Ingredients
Muffin pan
1 container of refrigerated crescent rolls (you can also use biscuits, but I found the crescents to be a bit thinner and not as heavy)
6 Eggs
1/2 cup shredded cheddar cheese
2 tbsp milk
2 tbsp minced chives
1/2 tsp salt
1/4 tsp pepper
Pre-heat oven to 400 (or temperature listed on dough instructions if it differs)
Press dough into muffin pan cups.
Sprinkle about a tablespoon of cheddar in the bottom of each cup.
In a bowl, mix eggs, milk, chives, salt and pepper. Pour mixture into cups until they are about 3/4 full. Don’t overfill or they will overflow (Just in case, the first time you make these put a baking sheet on the rack underneath the muffin tin to act as a catch in case they do overflow. Then adjust to a little less egg mixture next time. They are still delish either way.)
Pop into the oven for about 11-12 minutes, or until the eggs are just set.
And viola! A delicious breakfast that is super simple to make. These are also great with a little cooked bacon or ham added to the egg mixture. But if you want to keep it simple, they are great as is.
